Ostriches are the largest living bird and lay eggs which weigh around 1.5kg and are equivalent to approximately 24 chicken eggs.
The creamy eggs make superb omelettes and scramble but can also be boiled, fried, poached etc.
From the day our business started we realised we had to educate the public with regard to the health benefits of eating ostrich meat. This was not a new concept as we had already had a delicatessen and health food business and knew some of the challenges running a ground-breaking enterprise would bring.
The confidence in our product proved to be well founded. The delicious healthy meat was received with great enthusiasm at our stall in Borough Market. The attention to detail with ingredients was key to establishing our business. Even the herbs which are in our products are grown in our own herb gardens.
